Miss Molly’s Honey is artisanally produced in small batches throughout the spring, summer and fall. With apiaries in Jersey City and New York City, each honey batch is identified by its harvest date. As different flowers bloom throughout the year, bees gather these different varieties of nectar and pollen, resulting in a rainbow of different honey flavors. Harvesting and bottling honey in small batches allows us to savor the variances of the season, from flavor notes of mint & citrus in the spring to caramel & cinnamon in the fall.
The Superior Quality of Urban Honey
While it may come as a surprise, honey bees do extremely well in urban environments like Jersey City and New York City. Cities tend to have fewer pesticides and also provide an excellent variety of floral sources. Just like people, bees need a well-rounded diet, and steady access to a variety of nectar and pollen sources makes for happy, healthy bees (and amazing urban honey!).

Our honey is always raw, pure and nutritionally intact, just as our bees made it. We never heat our honey or filter out its natural goodness, which results in more complex, exquisite taste as well as maximum nutritional content. We employ best practices for integrated pest management in our hives to avoid artificial chemical treatments. What's better for the bees is often better for us as well.
